Curried Beets with Apple
Ingredients
- 2 T vegetable oil
- 1 t ground cumin
- 1 onion , sliced
- 2 cloves garlic , minced
- 1 C celery , diced
- 1 T fresh ginger , grated
- ¼ t cayenne pepper
- 1 t curry powder
- 2 lb red beets , cooked, peeled, and cubed
- ½ t kosher salt
- 2 apples , cored and cubed
- 2 T tamardin concentrate , dissolved in 1/2 C water
- 1 t garam masaka
- 1 C orange juice
Instructions
- Cook beets by baking or boiling. Sauté onions, garlic, and celery in oil until onions are opaque (about 2-3 minutes). Add ginger, cayenne, turmeric, and curry powder, and cook, stirring frequently for about 30 seconds.
- Add beets, apples, salt, tamarind/water mixture, and orange juice. Add more water if needed.
- Bring to a boil, reduce to simmer and cover and let simmer for about 20 minutes. Stir in garam masala. Taste and adjust seasoning. Serve hot with brown rice.
