Sweet & Sour Red Cabbage With Apples & Cilantro

Ingredients

  • T sugar (or alternative sweetener)
  • ¼ t sea salt
  • 3 gren onions , thinly sliced
  • 1 C fresh cilantro , coarsely chopped
  • ½ medium head red cabbage
  • 2 T vegetable oil
  • ½ t red pepper flakes
  • 1 large or 2 small apples , peeled and diced into ¼' pieces
  • ¼ C freshly squeezed lime juice

Instructions

  1. Quarter the cabbage & cut out the core. Cut the cabbage very thin (a mandoline or shredding disk of a food processor work best, but a sharp knife will do.)
  2. Heat the oil with the red pepper flakes in a large (12-inch) skillet or wide saucepan over medium heat. Add the apple and cook, stirring, for about 1 minute. Add the cabbage and toss with tongs to coat it with the hot oil.
  3. Add the lime juice, sugar and salt, cover the pan, and reduce heat to low. Cook until the cabbage is tender, 5–10 minutes.
  4. Add the green onions and cilantro and toss together with the tongs. Taste and season with additional salt or sugar if needed.
