Chicken Noodle Soup with Vegetables
Ingredients
- 1 onion , chopped
- 2 C carrots , sliced
- 2 C celery , sliced
- 10 oz package frozen peas (optional)
- ¼ t salt
- ¼ t black pepper
- ½ t dried basil
- ¼ t dried thyme
- 3 T dry parsley flakes
- 4 C water
- 2½-3 lb chicken , cut up
- 1 C uncooked thin noodles
Instructions
- Place all ingredients in slow cooker, except chicken and noodles. Remove skin and any fat from chicken pieces. Then place chicken in cooker on top of the rest of the ingredients. Cover and cook on high 4 to 6 hours.
- One hour before serving, remove chicken. Cool slightly. Cut meat from bones. Return meat to cooker. Add noodles. Cover and cook on high for one hour.
