Summer Pasta
Ingredients
- 1 summer squash , sliced
- 2 C mushrooms , sliced
- 1 C cherry or grape tomatoes
- 2 C spinach , roughly chopped
- ½ box angel hair pasta
- 3 T dahl's dairy butter
- juice from ½ lemon
- salt and pepper , to taste
Instructions
- Boil water and cook angel hair pasta al dente.
- While cooking the noodles, sauté squash and mushrooms in butter until softened. Add whole cherry or grape tomatoes and spinach. Drain noodles and add to pan. Add lemon juice and toss all ingredients to coat. Add salt and pepper to taste.
- Note: This pasta can be made using virtually any local vegetables. Try adding julienne carrots or replace spinach with mixed greens.
