Curried Potatoes
Ingredients
- 1 lb potatoes , peeled and sliced
- 1 onion , finely chopped
- 1 tomato , chopped
- 3 cloves garlic , minced
- 2 T curry powder , or more to taste
- ½ C water , approximately
- salt , to taste
- 1 hot pepper
- 2 T oil
Instructions
- Heat the oil in a heavy bottomed pot or iron pot. Add onion and garlic and sauté until soft but not brown. Add curry powder and fry for about 1 minute Add 1/2 cup of water and continue cooking until mixture has thickened.
- Add potatoes and mix well with the curry. Add tomato, salt and pepper and cook a few minutes more. Add water to cover, lower heat and cook potatoes until soft, adjust seasoning to taste.
