Apricot and Lavender Compote
Top vanilla ice cream with this sweet and unique compote!
Ingredients
- 1 lb ripe apricots , quartered
- ¼ C cane sugar
- ¼ C honey
- 2-4 T fresh lavender flowers , coarsely chopped
- 1 vanilla bean , split lengthwise
- 1 qt vanilla ice cream
Instructions
- In large saucepan, combine all ingredients except the ice cream, and mix well.
- Cook over medium heat for 6 to 8 minutes or until the apricots are very soft and some of the juice has been reduced (should have a thick applesauce consistency). Remove the vanilla bean. Cool compote to room temperature. Serve over ice cream.
