Cranberry Coulis
Ingredients
- 2 C whole fresh or frozen cranberries
- 1/3 C water
- 2 or 3 sprigs fresh rosemary
- ¾ C maple syrup or sugar
- ½ C orange juice
Instructions
- For coulis, combine cranberries and water in a medium saucepan. Bring to boiling; reduce heat. Cover and simmer for 4 to 5 minutes or till berries just begin to pop. Remove from heat and cool slightly. When just cool, press mixture through sieve. Discard skins.
- Stir sugar and orange juice into juice and place sprigs of rosemary in pan. Bring to a simmer and cook until it begins to thicken. Remove rosemary sprigs.
- Drizzle over dish while warm or cover and refrigerate coulis till thoroughly chilled and use later. Mixture thickens slightly as it chills, so you may need to add a bit of liquid when you reheat it.
