Cranberry Chutney
Ingredients
- 1 C fresh whole cranberries
- 1 small onion , chopped
- 1 C apple , peeled and chopped
- ½ green pepper , chopped
- ½ C brown sugar , packed
- ¼ C corn syrup
- ¼ C molasses
- ¾ C apple cider vinegar
- 1½ t ground ginger
- 1½ t dry mustard
- 1 t salt
- 1½ t lemon juice
- 1 t grated lemon rind
- 1 C raisins
- 1 C dried cranberries
- ½ t chili powder
Instructions
- Combine all ingredients in large saucepan. Bring to a boil, stirring constantly. Reduce heat and continue to cook and stir for approximately 1 hour, or until mixture thickens. Store in sterilized jars in refrigerator, or seal as in canning (see Ball Blue Book or www.freshpreserving.com for proper timing).
