Angel Hair Pasta with Fresh Tomato Sauce
This is a wonderful recipe for a hot summer day when you don’t feel like running a hot stove for a long time. The uncooked sauce retains the “just-picked” flavor of the tomatoes. It is warmed by the hot angel-hair pasta, which can be cooked up in just minutes.
Ingredients
- 2-3 cloves garlic
- 3 lb tomatoes
- 2 T fresh lemon juice
- 1 t salt
- 1 t sugar (optional)
- ½ t black pepper
- 1 lb capellini (angel hair pasta)
- ½ C chopped fresh basil
Instructions
- Mince garlic and mash to a paste with a pinch of salt using a large heavy knife. Core & coarsely chop two-thirds of the tomatoes. Halve remaining tomatoes and rub cut sides of tomatoes against large holes of a box grater set in a large bowl, reserving pulp and discarding skin. Toss pulp with chopped tomatoes, garlic paste, lemon juice, salt, optional sugar, and pepper. Let stand until ready to use, at least 10 minutes.
- Meanwhile, cook pasta in a 6- to 8-quart pot of boiling salted water, uncovered, 2 minutes or until al dente. Drain in a colander and immediately add to tomato mixture, tossing to combine. Sprinkle with basil, and fresh grated Parmesan if desired.
