Apple Chutney
Ingredients
- 2½ lbs under ripe apples , peeled and coarsley chopped
- 1¼ lbs onions , coarsely chopped
- 2 lemons , finely sliced in semi-circles
- 10 oz raisins
- 2 cloves garlic , finely chopped
- 1 pint cider vinegar
- 13 oz dark molasses sugar
- 1 T salt
- 1 t ground ginger
- 1 t ground cinnamon
- 1 t ground turmeric
Instructions
- Put the apples, onions, lemons, raisins, garlic, and vinegar in a non- reactive saucepan. Bring to a boil and simmer for 15-20 minutes until the apples soften but retain some texture. Add the sugar, stirring until dis- solved. Simmer for 30-45 minutes until most of the liquid has evaporated and the mixture is thick.
- Remove from heat and add the salt and spices. Ladle into hot sterilized jars and seal. Ready in 1 month. Keeps 1 year plus.
