Blueberry and Wild Rice Pancakes
Ingredients
- 4 C flour
- ¼ C baking powder
- 1/8 C sugar
- pinch of salt
- 4 eggs
- 1 qt buttermilk
- 1 t vanilla
- 2 C blueberries
- 2 C wild rice , cooked
Instructions
- Sift together flour, baking powder, sugar, and salt. Set aside.
- In a separate bowl, whisk together eggs, buttermilk, and vanilla.
- Combine dry and wet mixtures, but do not over mix. Fold in blueberries and wild rice. Cook on a skillet or in a pan at approx. 350°F. Finish off with the finest syrup you can find.
