Burst Cherry Tomatoes
Ingredients
- 1 T extra virgin olive oil
- 1 pint large cherry tomatoes
- 1 medium garlic clove , minced
- 1 T fresh parsley , chopped
- ½ t salt
- ½ t fresh thyme , chopped
- ¼ t fresh rosemary , finely chopped
- 1/8 t fresh ground pepper
Instructions
- Heat oil in a medium skillet over high heat until hot. Add tomatoes; sauté 1 minute while rolling tomatoes constantly. Reduce heat to medium. Add all remaining ingredients; mix well. Cook for 2 minutes (1 minute if the tomatoes are small) or until the skin of the tomatoes just begin to crack, stirring constantly.
