Cold Melon Salsa
Ingredients
- 3 ripe, firm tomatoes
- ½ honeydew melon
- 1 cantaloupe
- 1 C red onion
- ½ jalapeno pepper (or more)
- ½ C fresh cilantro
- ½ C almonds
- 3 T fresh orange juice
- ¼ t salt
- 2 T fresh lime juice
Instructions
- Finely dice tomatoes, (for a smoother texture you can remove the seeds), peeled honeydew melon, and peeled cantaloupe. Put into a large serving bowl.
- Mince red onion and jalapeno pepp er (you can add more chilies if you like a little more heat). Add to the bowl.
- Finely chop fresh cilantro and almonds add to the bowl and stir with the other ingredients.
- Stir in orange juice, salt and lime juice. Refrigerate for at least 4 hours and serve topped with a few cilantro leaves.
