Cool On Curry

Ingredients

  • ¼ C mayonaise
  • ¼ C yogurt
  • ¼ C sour cream
  • ¼ C milk
  • 2 T curry powder
  • ½ C mango chutney
  • 2 C red grapes
  • 1 C celery hearts , chopped
  • ½ C cashew halves
  • 3 C fully cooked medium shrimp , cooked (or turkey or chicken)
  • toasted coconut , for garnish

Instructions

  1. In large bowl combine mayonnaise, yogurt, and milk; stir well. Add curry powder and chutney. Gently stir in grapes, celery and shrimp. Chill well before serving to blend flavors. Garnish with toasted coconut, cashews, and chopped mango. Serve on chilled raddichio or romaine hearts.
