Cranberry Holiday Cups
Ingredients
- ½ C butter
- 3 oz cream cheese , softened
- 1 C gold-n-white flour
- 2 T milk
- 2 T maple or brown sugar
- 1 egg
- ¾ C brown sugar
- 1 T butter
- 1½ t orange peel , finely grated
- ½ C fresh or frozen whole cranberries
- ½ C pecans , chopped (optional)
Instructions
- Preheat oven to 325°F. Beat together butter and cream cheese in large mixing bowl with mixer about 30 seconds or until softened. Stir in flour, milk and sugar. Cover and chill l hour.
- In separate bowl, stir together egg, brown sugar, butter and grated orange peel. Stir in fresh or frozen cranberries and pecans; set aside.
- Shape chilled dough into 24 1” balls. Press each dough ball onto bottom and sides of 1– 1/2” muffin pans with papers. Spoon 1 tablespoon filling into each cup. Bake 30 minutes until filling is set. Cool on rack. Remove from pans. Chill to store.
