Curried Peas and Potatoes (India)
Ingredients
- 2 T oil
- 2½ t ginger root , grated
- 2½ t garlic , chopped
- 1 C onion , chopped
- 1 t salt
- 1 T cumin
- ½ t ground turmeric
- 1 t ground red pepper
- 3f medium tomatoes , chopped
- 1½ T cilantro , chopped, or ground coriander
- 1 large potato , cubed
- ¾ C water
- 3 C frozen peas
Instructions
- In a medium saucepan, heat 2 T oil. Add and sauté ginger, garlic, onion, and salt.
- When onions are brown, add cumin, turmeric, and red pepper.
- Stir in tomatoes and cilantro. Cook 5 minutes, until liquid has evaporated.
- Add potato and water, stir well, bring to a boil, and simmer, covered, for 10 minutes.
- Add frozen pea. Simmer 5 minutes or until potatoes and peas are tender. Garnish with 1 T. cilantro, chopped. Serve over rice as a main dish, or as side dish with curry meal.
