Happy Soup
I was rifling through my fridge one night and cobbled together what I could find to make a soup. When I first tasted the result, I announced to the air, “This tastes happy!” Hence, a perfect soup for cold, gray, sad winter nights.
Ingredients
- olive oil
- 1 onion , chopped
- 4-5 garlic cloves , minced
- 4-5 yukon gold potatoes
- 2 carrots
- handful of spinach
- 4 C vegetable broth
- soymilk
- 1 bayleaf
- ground ginger
- cumin
- coriander
- salt
- pepper
Instructions
- Sauté the onions and garlic in oil in a large soup pot. Peel and dice the root vegetables. Put root vegetables, spices (to taste) and broth in the pot and cook until vegetables are nearly done.
- Meanwhile, clean and chop spinach. Add the spinach to the soup and cook until done. Fish out the bay leaf. Let cool slightly, then puree 2/3 of the soup with some soymilk. Return it to the pot and reheat. Serve with croutons or good bread.
