Hazelnut Crusted Pork Medallions
Ingredients
- 1½-2 lbs pork loin
- 1½ C hazelnuts
- 1½ T fresh rosemary
- 2 T fresh parsley
- 2 T olive oil
- 2 T shallots , finely diced
- 2 t garlic , minced
Instructions
- Cut pork loin into 3/4 – 1 inch slices and flatten to 1/4 – 1/2 inch. Sprinkle both sides with a little salt and pepper and set aside.
- In a food processor (or with a knife) fine chop the hazelnuts, rosemary, and parsley — separately, then combine.
- Press hazelnut mixture into both sides of the pork medallions.
- Heat the olive oil in a skillet and add the garlic and shallots — stir. Add the medallions to the skillet and cook for about 4 minutes, turn and cook another 4 minutes. The pork will be done when it reaches and internal temperature of 160ºF. Optional — can top with a small amount of pork gravy.
