Lemon Ginger Yams

Ingredients

  • 3 T butter
  • ¼ C brown sugar
  • 1inch piece ginger , peeled and minced
  • 1 t sea salt
  • 1 lemon , zested and juiced
  • 2 lb yams , wedged, unpeeled
  • ¼ C flour
  • 1 T olive oil

Instructions

  1. Preheat oven to 350°F.
  2. Cook the butter, sugar, ginger, salt, lemon zest, and lemon juice over low heat for 5 – 10 minutes.
  3. Place yams in a bowl and toss with the olive oil. Shake on the flour and toss that with the yams. Add and mix in the cooked sauce and place on a cookie sheet. Bake for 45 – 55 minutes until the yams are easily pierced with a fork. Serve warm.
