Lemon Ginger Yams
Ingredients
- 3 T butter
- ¼ C brown sugar
- 1inch piece ginger , peeled and minced
- 1 t sea salt
- 1 lemon , zested and juiced
- 2 lb yams , wedged, unpeeled
- ¼ C flour
- 1 T olive oil
Instructions
- Preheat oven to 350°F.
- Cook the butter, sugar, ginger, salt, lemon zest, and lemon juice over low heat for 5 – 10 minutes.
- Place yams in a bowl and toss with the olive oil. Shake on the flour and toss that with the yams. Add and mix in the cooked sauce and place on a cookie sheet. Bake for 45 – 55 minutes until the yams are easily pierced with a fork. Serve warm.
