Marakesh Cabbage
Ingredients
- ½ C canola oil
- 1 large head green cabbage , shredded
- 2 yellow onions , diced
- 2 carrots , diced
- 2 tomatoes , chopped
- 1 T cumin , ground
- 1 T coriander
- 1-inch piece fresh ginger , peeled and minced
- ½ t paprika
- 1 t cinnamon
- 1 t sea salt
- ½ C water
- 1½ t red crushed pepper
Instructions
- Sauté onion and carrot in oil for a few minutes on medium heat. Add cabbage and cook about 10 minutes longer stirring often. Add remaining ingredients and cook on low heat for another 10 minutes until all the vegetables are just done.
