Mediterranean Pasta Salad
Ingredients
- 1 package bionature organic chiocciole pasta , cooked al dente, drained and cooled
- 1 C dried tomatoes , hydrated in ½ C hot water, drained and chopped
- 1 C kalamata olives , pitted and chopped
- 1 C raw pumpkin seeds
- DRESSING:
- ½ C organic olive oil
- ¼ C organic balsamic vinegar
- 2 T organic lemon juice
- ¼ C romano cheese , grated
- ¼ C shredded parmesan cheese
- 1 bunch organic green onions , chopped
- 2 t dry basil
- 1 t granulated garlic
- 1 t sea salt
Instructions
- Combine dressing ingredients. After pasta is cold, combine all ingredients.
