Mexican Brown Rice Casserole
Ingredients
- 15 oz can corn , drained
- 1 can (10 oz) diced tomatoes and green chiles
- 15 oz can black beans , drained
- 8 oz sour cream
- 1 jar chunky salsa
- 1 C cheddar cheese , shredded
- 2 C brown rice , cooked
- ¼ t pepper
- crushed red pepper , to taste
- 6 green onions , sliced
- ¾ C additional shreded cheese
- sliced black olives
Instructions
- Combine corn, tomatoes and chilies, black beans, sour cream , salsa, 1 C cheese, brown rice, pepper, and crushed red pepper together in a casserole dish.
- Top with sliced green onions, black olives, and additional ¾ C shredded cheddar cheese. Bake at 350°F for 50-60 minutes.
- Serve with sour cream, salsa, avocado or guacamole, chips and/or tortillas.
