Minted Green Peas
Ingredients
- 2 T butter
- 1 T olive oil
- 1 yellow onion , chopped
- 1 t fresh spearmint , chopped
- 1 lb green peas , frozen
- 1 t sea salt (optional)
- 2 T parsley , chopped
- 1 t sugar
- 1 clove garlic , minced
- 1 carrot , minced
- 2 T lime juice
Instructions
- Cook the onions and carrots in the butter and oil over medium heat until the onions are translucent. Add the remaining ingredients and cook over low heat another 5–10 minutes until the peas are hot enough to serve.
