Pea Soup
Ingredients
- 1½ C green split peas
- 7 C water
- 1 bay leaf
- 1 large carrot , chopped
- 1 medium onion , chopped
- 2 stalks celery , chopped
- ½ t salt
- 1 t prepared mustard
Instructions
- Combine peas, water and bay leaf in a heavy pot, bring to a boil, then lower heat to simmer.
- Chop the vegetables, adding them to the pot as you get them ready. Gently simmer, covered or with lid slightly ajar, for 3 hours, stirring occasionally. Add salt and mustard, and more water if necessary.
