Spiced Rice Pudding (India)

Ingredients

  • ½ C long grain rice
  • 1 C water
  • 3 C milk or soymilk
  • 1/3 C brown sugar , packed
  • 2 bay leaves
  • 2 cardamom pods
  • Instructions

    1. Bring long grain rice and 1 C water to a boil, cover and simmer 10 minutes.
    2. Add milk, sugar, bay leaves, cardamom pods, cinnamon stick, cloves, salt, raisins, and cashews (optional) to the rice. Return to a boil, cover, and simmer over low heat 30-45 minutes, stirring occasionally so mixture does not stick to bottom of pan.
    3. When mixture is thickened, remove from heat and stir in 1 t vanilla. Chill and serve as dessert, snack, or breakfast food.
