Spring Vegetable Salad
Ingredients
- 1 bunch asparagus , cut into bite-sized pieces
- 1 bunch broccoli , broken into flowerettes
- 1 yellow pepper
- 1 red pepper
- 1 lb carrots , julienned
- 1 medium zucchini , diced
- 1 medium yellow squash , diced
- 2 C frozen peas , thawed
- ¼ C lemon juice
- ¼ C canola oil
- ¼ C olive oil
- sea salt
- pepper
- 1 C arugula , cleaned
- 1 bunch tarragon
Instructions
- Blanch or steam all veggies, then plunge in ice water to stop cooking. Whisk together lemon juice, canola oil, olive oil, salt & pepper. Toss with arugula and tarragon. Serve with veggies on top.
