Tomato Artichoke Toss
Ingredients
- 7 oz grape tomatoes , halved
- 1 oz fresh spinach leaves , coarsely chopped
- 7 oz artichoke hreats , rinsed, drained, and coarsely chopped
- ¼ C red onion , finely choipped
- ¼ C fresh basil leaves , chopped
- 2 T balsamic vinegar
- ½ t sugar
- ¼ t pepper
- ¼ t salt
- 1/8 t crushed red pepper flakes (optional)
- 1 oz fat-free or redeuced fat feta cheese , rinsed, drained, and crumbled
Instructions
- In a large bowl, toss together all the ingredients except feta. When everything is combined, sprinkle the top with feta.
