Whole Foods Rhubarb Crunch
Ingredients
- ½ C whole wheat flour
- ½ C unbleached white flour
- ¾ C rolled oats
- ½ C brown sugar , packed
- 1½ t ground cinnamon
- ½ C butter , melted
- 4 C fresh rhubarb , chopped
- 1 C sucanat
- 1½ T cornstarch
- 1 C water
- 2 t pure vanilla extract
Instructions
- Preheat oven to 350°F.
- Mix flours, oats, brown sugar and cinnamon in a bowl; stir in butter. Press half the mixture into an ungreased 9- inch square baking pan. Top with rhubarb.
- Mix Sucanat and cornstarch in a medium saucepan. Stir in water and vanilla until blended. Cook and stir over medium heat until thickened. Carefully pour over rhubarb.
- Sprinkle evenly with remaining crumb mixture. Bake 1 hour. Serve warm or cold. Refrigerate leftovers.
