Whole Foods Rhubarb Crunch

Ingredients

  • ½ C whole wheat flour
  • ½ C unbleached white flour
  • ¾ C rolled oats
  • ½ C brown sugar , packed
  • t ground cinnamon
  • ½ C butter , melted
  • 4 C fresh rhubarb , chopped
  • 1 C sucanat
  • T cornstarch
  • 1 C water
  • 2 t pure vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Mix flours, oats, brown sugar and cinnamon in a bowl; stir in butter. Press half the mixture into an ungreased 9- inch square baking pan. Top with rhubarb.
  3. Mix Sucanat and cornstarch in a medium saucepan. Stir in water and vanilla until blended. Cook and stir over medium heat until thickened. Carefully pour over rhubarb.
  4. Sprinkle evenly with remaining crumb mixture. Bake 1 hour. Serve warm or cold. Refrigerate leftovers.
